Since I just started this gluten free recipe community, I will start by posting one of my favorites:

Gluten Free Cobbler

1 cup Pamela's Baking and Biscuit Mix

1/2 cup sugar

1 cup water or milk

1/2 stick of butter or margarine

1 can of Cherry Pie filling (I use Comstock)

Melt the butter in a 8X8 inch baking dish or pan. Mix together the Pamela's Baking mix, sugar and water or milk. Pour over the butter in the pan. Pour the pie filling on top. Do not stir. Place in a 400 degree oven for 45 minutes. This is delicious!
