What are your favorite recipes that use pumpkin?

Pumpkin Spice Cake

1 Spice Cake Mix (dry)

1 3/4 cup pumpkin

1 small vanilla instant pudding (dry)

1/2 cup oil

3 eggs

1/2 tsp. pumpkin pie spice

Mix together well.  Pour into a greased 9x13 cake pan. Bake as directed on cake mix box.  Cool completely.  Frost with cream cheese frosting. 

Cream Cheese Frosting

8 oz. cream cheese-softened

1/2 cup butter (1 stick)

1 tsp. vanilla

1 pound powdered sugar (confectioner's sugar)

Mix together cream cheese and butter.  Add vanilla and mix well.  Add powdered sugar and beat until smooth.  Add milk and beat until creamy.

I love carving out the pumpkin and making a dinner in there with hamburger, rice and cream soup.  It is perfect for fall weather.  You just bake it up in the oven and tada full dinner ready and a warm house!

I just posted a recipe today. Pumpkin Pie Chocolate Chip Muffins. With streusel. Because what's a muffin w/o streusel.

Pumpkin Pie!

I just use the recipe on the can of pumpkin. Quick and easy, but I prefer homemade pie crust over the frozen, pre-made kind.


Loving all these great sounding recipes!  Here are my favorite cookies for this time of the year...Pumpkin Chocolate Chip Cookies!

Pumpkin Chocolate Chip Cookies

1 cup canned pumpkin
1 large egg
1 scant cup granulated sugar
6 tablespoons vegetable oil
1 teaspoon vanilla
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 teaspoon baking soda
1 1/2 teaspoons double-acting baking powder
2 cups all purpose flour or white whole wheat flour (9 oz)
1 cup semi-sweet chocolate chips

Preheat oven to 375 degrees F.

Beat pumpkin, egg, sugar, oil, vanilla, cinnamon, salt, baking soda and baking powder together in a mixing bowl. Make sure all the leavenings are dissolved (no lumps). Add the flour and stir just until it is mixed in, then stir in the chocolate chips.

Using a very generously rounded tablespoon measure, drop onto parchment lined cookie sheets spacing about 2 inches apart (cookies shouldn’t spread much). Bake at 375º for 13 to 15 minutes.
