Looking for Breakfast Ideas

This past weekend I made a breakfast casserole for (I think) the first time.  I absolutely fell in love with how easy they are!  I'm still struggling with  my goal of feeding my family a healthy breakfast every morning.  I'm looking to you for some easy, healthy breakfast ideas.  I would love some more breakfast casserole ideas (quiches count, too)--but really anything easy (and not the norm--oatmeal/pancakes, etc) would work.

If I get enough response, I would like to include them all in a blog post.

We do homemade muffins and smoothies (easy if you make the muffins ahead of time and freeze), cream of brown rice, baked oatmeal and a yummy baked french toast.

Some really simple ones are apples with peanut butter and leftover rice drizzled with honey and served with milk..

My friend suggested making your own version of the fast food breakfast sandwich and freezing them for a quick, healthy breakfast especially  for dads.  I really like this idea, but haven't tried it yet.

We too are struggling with breakfast ideas. Since our family is small we do cereal far too much. But when I plan ahead I make pancakes, granola, scrambled eggs with veggies or fruit and yogurt.

I know you said no oatmeal but try the Peanut Butter Baked Oatmeal by Lynn's Kitchen Adventures - you can fix the night before and bake in the morning.

We really like Apple Raisin French Toast casserole.
